- 200 g sugar
- 1 tsp baking powder
- 0.5 tsp salt
- 250 ml soy milk
- 2 tsp vanilla extract
- 100 ml canola oil
- 1 tsp distilled white vinegar
- 200 g powdered sugar
- 100 g vegan butter
- 200 g fresh strawberries (optional, for decoration)
Instructions
- Preheat the oven to 180°C.
- Mix the flour, sugar, baking powder, and salt in a large bowl.
- Add the soy milk, canola oil, white vinegar, and vanilla extract.
- Whisk everything together until smooth and no lumps remain.
- Pour the batter into a greased cake pan evenly.
- Bake for about 30 to 35 minutes or until a toothpick comes out clean.
- Cool the cake in the pan for 10 minutes before transferring it to a cooling rack.
- Prepare the frosting by mixing powdered sugar and vegan butter until creamy.
- Frost the cake and decorate with strawberries if desired.
Notes
Store the cake in an airtight container to keep it fresh for several days. Freezing individual slices is also an option.
