Description

A delightful dessert featuring creamy Skyr, fluffy whipped cream, and crunchy Raffaello balls, balanced with fresh raspberries for a refreshing experience.


Ingredients

Scale
  • 500 g Skyr (or low-fat quark)
  • 100 g natural yogurt
  • 200 ml whipped cream
  • 2 tbsp fine granulated sugar
  • 300 g raspberries
  • 230 g Raffaello balls

Instructions

  1. Set aside six to eight Raffaello balls for decoration.
  2. Crush the remaining Raffaellos until they are small pieces.
  3. Combine the Skyr, fine granulated sugar, and natural yogurt with the crushed Raffaellos in a large bowl. Mix until homogeneous.
  4. Whip the whipped cream in a separate bowl until stiff. Gently fold the whipped cream into the previous mixture to retain airiness.
  5. Layer half of the cream mixture into a large glass bowl or baking dish. Distribute about two-thirds of the fresh raspberries evenly on top.
  6. Cover the raspberries with the remaining cream and decorate with the rest of the raspberries and the reserved Raffaellos.
  7. Cover the bowl with plastic wrap and refrigerate for about 150 minutes to set.

Notes

This dessert can be prepared in advance. Use a freezer bag to crush the Raffaellos for an easier process. Experiment with different fruits for variety.
