A rich and flavorful Nigerian chicken stew that combines tender chicken with vibrant vegetables and spices, perfect for a comforting meal.

- 1 kg chicken, cut into pieces (preferably organic)
- 400 g tomatoes (chopped or canned)
- 2 onions, chopped
- 3 garlic cloves, minced
- 1 piece ginger, grated
- 2–3 green bell peppers, chopped
- 2–3 tbsp vegetable oil
- 1–2 Scotch Bonnet chilis (to taste)
- 1 tsp thyme
- 1 tsp paprika
- Salt and pepper to taste
- Cilantro or parsley for garnish
Instructions
- Heat the oil in a large pot over medium heat.
- Add chopped onions and sauté for about 5 minutes until translucent.
- Add garlic, ginger, and green bell peppers, sautéing for about 2 minutes until fragrant.
- Brown the chicken pieces on all sides in the pot.
- Add chopped tomatoes, Scotch Bonnet chilis, thyme, paprika, salt, and pepper. Stir well to combine.
- Bring to a boil, then reduce the heat.
- Cover and simmer for about 30-40 minutes until chicken is tender and cooked through.
- Serve warm, garnished with herbs, with rice or bread.
Notes
Do not over-brown the chicken to keep it juicy. Adjust spices according to taste preference.
