Description

A rich and flavorful Nigerian chicken stew that combines tender chicken with vibrant vegetables and spices, perfect for a comforting meal.


Ingredients

  • 1 kg chicken, cut into pieces (preferably organic)
  • 400 g tomatoes (chopped or canned)
  • 2 onions, chopped
  • 3 garlic cloves, minced
  • 1 piece ginger, grated
  • 23 green bell peppers, chopped
  • 23 tbsp vegetable oil
  • 12 Scotch Bonnet chilis (to taste)
  • 1 tsp thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • Cilantro or parsley for garnish

Instructions

  1. Heat the oil in a large pot over medium heat.
  2. Add chopped onions and sauté for about 5 minutes until translucent.
  3. Add garlic, ginger, and green bell peppers, sautéing for about 2 minutes until fragrant.
  4. Brown the chicken pieces on all sides in the pot.
  5. Add chopped tomatoes, Scotch Bonnet chilis, thyme, paprika, salt, and pepper. Stir well to combine.
  6. Bring to a boil, then reduce the heat.
  7. Cover and simmer for about 30-40 minutes until chicken is tender and cooked through.
  8. Serve warm, garnished with herbs, with rice or bread.

Notes

Do not over-brown the chicken to keep it juicy. Adjust spices according to taste preference.
