Description

An aromatic and hearty Nigerian chicken stew simmered in a spicy tomato sauce, perfect for family gatherings and celebrations.


Ingredients

Scale
  • 1 kg chicken pieces or breasts
  • 400 g fresh or canned tomatoes
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 2 medium onions, chopped
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp ground cloves
  • 23 tbsp oil (peanut or sunflower)
  • Salt and pepper to taste

Instructions

  1. Cut the chicken into cubes and sauté in a large pot with oil until golden brown.
  2. Add the onions and bell peppers, and sauté until softened.
  3. Mix in the tomatoes and spices, stirring well. Allow to simmer for a few minutes for the flavors to meld.
  4. Reduce the heat and let simmer until the chicken is cooked through and the sauce has thickened, about 20-30 minutes.
  5. Season with salt and pepper to taste before serving.
  6. Serve the stew hot with rice, bread, or steamed vegetables.

Notes

For added flavor, marinate the chicken overnight. You can also use an air fryer or oven for different cooking methods.
