Japchae is a delicious Korean glass noodle salad filled with vibrant flavors and textures, perfect for any occasion.
Ingredients

- 200g Glass noodles
- 1 Carrot, julienned
- 1 Bell pepper, sliced
- 1 Zucchini, sliced
- 100g Mushrooms, sliced
- 2 Spring onions, chopped
- 3 tbsp Soy sauce
- 2 tbsp Sesame oil
- 2 cloves Garlic, minced
- 1 tbsp Sugar
- 1 tbsp Sesame seeds
- Salt and Pepper to taste
Instructions
- Cook the glass noodles according to the package instructions, then drain and set aside.
- Slice the vegetables into thin strips.
- Heat 1 tablespoon of oil in a wok and sauté the minced garlic over medium heat until fragrant.
- Add the prepared vegetables and stir-fry for about 3-5 minutes until tender.
- Combine the cooked noodles with the vegetables in the wok, then season with soy sauce, sesame oil, sugar, and pepper.
- Mix everything together until well combined and heated through.
- Sprinkle with sesame seeds before serving warm or at room temperature.
Notes
Prepare all ingredients ahead of time for a smoother cooking process. This dish can be made ahead and stored in the fridge.
